Method for determination of salt in food, based on ISO 1738.1997 and ISO 1841-2

Salt (NaCl) is found in many foods such as meat, canned food, dried soups, and dairy products. In the food industry, the addition of salt improves the preservation, appearance and taste of food.

Salt analysis is common practice in the food industry, and automatic titration is a simple and standardized analysis. Since NaCl is soluble in water, the most common method for determining the amount of salt is titration with silver nitrate after dissolving the sample in water.

For the determination of salt in food, two applications are proposed, depending on the type of sample (liquid or solid food) and the unit of the sample amount (weight for solid food or volume for liquid food).

Advantages of using the AT1000 system for determining the salt level in food:

  • Analysis of liquid samples - results in g / l
  • Analysis of solids (cheese, tomato sauce, etc.) - results in %
  • For a solid sample amount of 1 to 5 g, the working range is 0.1 to 5% NaCl.
  • For a liquid sample volume of 50 ml, the working range is from 0.1 to 1 g/l NaCl.
  • Higher concentrations can be obtained using less sample.
  • The optional AS1000 Sample Changer with multi-parameter automation solutions reduces time by freeing operators from repetitive analyzes.
